Ropewalk Galle welcomes Delhi’s highly-rated Fig & Maple restaurant for an exclusive two-day pop-up in Galle Fort.

Fig & Maple, one of New Delhi’s most celebrated culinary destinations, is set to bring its innovative, ingredient-first cuisine to Sri Lanka with an exclusive two-day pop-up at the historic Galle Fort Hotel’s award-winning bar and restaurant Ropewalk. This event, taking place on the 24th and 25th of August, marks the first international showcase of Fig & Maple’s distinctive approach to reimagining Indian flavours, offering guests in Sri Lanka a unique dining experience that marries tradition with modernity.

Under the leadership of Chef-Founder Radhika Khandelwal, and Co-Founder and Bar Strategist, Ravish Bhavnani, Fig & Maple has gained acclaim for its cuisine-agnostic, zero-waste kitchen philosophy, where local and seasonal ingredients are the stars of the show. This pop-up event will see the restaurant bringing its signature style to Ropewalk, where diners will be treated to a specially curated menu that explores underrepresented regional Indian cuisines.

The event will open with an intimate sit-down dinner on the 24th of August. The menu is a testament to Fig & Maple’s commitment to innovation, featuring dishes such as Chicken Liver Ghee Roast Pate Ice Cream—a surprising and delightful combination served with berry pickle and achhapam—and Naga Smoked Pork with axone, timur pepper, and white sticky rice.

In addition to the dinner, the event will also feature the international debut of Fig & Maple’s Sharbat cocktail menu at Ropewalk, Galle’s most celebrated bar. This new collection of cocktails is a modern tribute to the traditional Indian art of Sharbat making, crafted with indigenous cooling agents from across the country, and showcased in Galle’s innovative cocktail centre, Ropewalk. Standout drinks include the Jamun Butter cocktail, which blends the tangy sweetness of java plum with the richness of raw mango butter, enhanced by the smoothness of Patrón Silver tequila, and the Shell-Don, a refreshing concoction featuring Dewar’s Scotch whisky designed to complement the bold flavours of the accompanying dishes. “Bringing our new Sharbat-inspired cocktails to Sri Lanka’s award-winning bar, Ropewalk, is a great moment for us, as this is Fig & Maple’s first international pop-up.
