Q: Can you tell us about the expansion of APRI Enterprise Lanka’s portfolio in the hospitality sector since its inception in 2016?

Paolo Gavioli (PG): APRI Enterprise Lanka has diversified its portfolio under the AQUA brand. This includes AQUA Forte, known for fine Italian dining; AQUA Pizza, a Neapolitan pizza chain; and AQUA Forno, a cafe, bakery and Italian street food outlet.

AQUA Villa manages hotels and villas, with plans for a boutique hotel on hold due to external challenges.

Despite setbacks, the company has expanded with AQUA Forte setting a standard in upscale dining and AQUA Pizza branching out. AQUA Forno and the acquisition of Park Street Trattoria in Colombo further enhance its offerings.

Q: What factors contribute to the success of APRI Enterprise in managing and operating restaurants, food outlets and boutique hotels in Sri Lanka?

PG: Our success stems from our commitment to authenticity across our diverse ventures – be it fine dining, pizza or a bakery.

Our dedication resonates with both locals and tourists. In essence, our success lies in delivering authenticity in every aspect of our business, enriching the culinary landscape.

Roberto Vicario (RV): Our hands-on approach is pivotal to our success, distinguishing us from investors who delegate responsibilities. Our Italian identity in Sri Lanka isn’t simply a label – it’s a commitment to being actively involved in every aspect of our operations. We’ve made lifestyle changes including relocating to ensure our constant presence and dedication.

Despite offers to expand to other countries, we’ve prioritised maintaining quality and authenticity by staying focussed on Sri Lanka.

Q: How have your ventures helped improve the acceptance of diverse experiences in Sri Lanka?

RV: Our aim is to facilitate the acceptance of new products into Sri Lanka, ensuring access to essential ingredients like specialised rice for risotto for example.

Even Sri Lankan customers now crave authentic risotto, demanding the proper ingredients such as rice imported from Italy. Local alternatives fall short of meeting the standards necessary for this Italian dish.

PG: As Sri Lanka’s tourism industry grows, there’s a demand for diverse culinary experiences. While promoting local products is important, travellers also seek alternative dining options.

By showcasing imported wine, spirits and speciality foods, we offer memorable dining experiences that reflect the country’s evolving hospitality scene.

Q: In what ways has your organisation adapted to the local market – and how has this enabled it to tackle challenges?

PG: As a foreign owned company in Sri Lanka, we prioritise our commitment to the local community. All our 64 employees are Sri Lankan.

Despite facing challenges such as the Easter bombings and COVID-19 pandemic, we diversified our customer base beyond tourism by offering an authentic dining experience. This strategic shift not only helped us survive but also enabled us to expand and open new branches.

Q: Can you share your organisation’s brand philosophy?

RV: Our philosophy centres on honesty and authenticity, refusing to compromise on flavour or quality.

Q: How do Italian brand values play out in your product or service portfolio?

PG: Our commitment to authenticity is the cornerstone of our efforts, echoing Italy’s renowned values. Beyond taste, food embodies cultural richness and ingredient quality – principles we uphold by meticulously sourcing and respecting ingredients.

Each restaurant offers a tailored experience, from fine dining elegance to casual charm, aiming to transport patrons to Italy’s culinary world.

Ultimately, we aim to offer Sri Lanka not only a meal but an immersive celebration of Italian cuisine and culture intertwined with the island’s unique flavours.
